LeBlanche recently shared a few of his favorite things with Penta. “I would like to continue to innovate and push the boundaries of mixology, culture, and art through Thyme Bar.” Experimentation isn’t the norm in Europe. “The bar scene in the States is quite different from Europe,” LeBlanche adds. If the feedback is good, we take notes and then we sell it twice, four times, to get multiple feedback.” Eventually it’s added to a forthcoming menu. “Then we’re going to sell my cocktail inside. “When I work on a bespoke cocktail, I’m going to look for a very different glassware or something that doesn’t look like a glassware,” LeBlanche says.

LeBlanche always bases his novel concoctions on classic drinks to give a little familiarity to the client, then adds his own magic. “Sometimes it can be challenging to achieve, but that’s also how you can get very creative and occasionally that’s how we end up with a new cocktail for the next menu.” “It’s got to be something that nobody has ever had and that no one has ever seen before so there's already a lot of expectation,” LeBlanche says of the process. The first is made of peanut butter bourbon, Peychaud bitter, tonka, thyme, and rosemary macron, while the Prairie Smoke is a combination of Montelobos mezcal, maraschino, pecan, and walnut.įor those who fancy a personalized concoction, LeBlanche admits bespoke drinks can be a bit stressful, especially when the bar is buzzing, but he gives it his all.
